I’ve looked in grocery stores countless times for a healthier popsicle or dairy free ice cream for my family, and I always come up empty handed. They always have cane sugar, sweeteners, preservatives, gums and more added. Isn’t fruit sweet enough without more sugar???? My daughter does consume sugar occasionally, but we definitely limit it.
I created this recipe quickly and easily, and it is a hit with my daughter and husband!! I know what you are thinking, though. Who has time to make these? I promise it takes me about 10 minutes from start to finish, if that. There are no preservatives, gums, sweeteners or added sugars. There is nothing but fruit and 100% coconut milk in these. They are super yummy!!! They are kid tested and kid approved! I feel great about giving these to my family knowing the ingredients are clean and safe.
I hesitated buying popsicle molds for so long because almost all that I found were plastic. I prefer to stay away from plastic as much as possible. Finally, I searched for stainless steel popsicle molds, and I found these. Here’s the link on Amazon. Woohoo!! I was so excited. There are several different options. The one in the link is the one I have. I don’t know if they are dishwasher safe, so I do hand wash these.
I buy the coconut milk on Amazon, and this brand is what I recommend using for the recipe and in your everyday life. I prefer the small sizes. Here’s the link for the one I buy. This brand is 100% coconut milk without any added preservatives, sweeteners, gums, etc.
- 4 organic dates (look for no preservatives or additives)
- ⅓ cup hot filtered water
- 3 cups frozen organic strawberries
- 8.5 oz or 1 cup coconut milk (Aroy-D brand recommended-no preservatives or additives 100% coconut milk)
- Place dates in a small bowl.
- Pour ⅓ hot, filtered water over dates and massage dates into water.
- Allow to sit 2-3 minutes.
- Pour dates and water into Vitamix, food processor or high powered blender. Blend.
- Add three cups organic frozen strawberries.
- Add 8.5 oz or 1 cup coconut milk
- Blend well.
- Pour into 6 popsicle molds.
- Pour any excess into glass Tupperware and freeze.
- Allow to freeze approximately 6-8 hours.
- Briefly run Popsicle mold under warm water, pull popsicle out and enjoy!!
