Cacao Tigernut Milk

Dairy and nut free milk alternative
Ingredients
  • ½ cup Organic Gemini Tigernuts
  • 2 cups of filtered water
  • 1 Tablespoon of Pascha Organic 100% Cacao unsweetened chips
  • 1 teaspoon Singing Dog Vanilla or other gluten free vanilla
  • 2 and ½ Tablespoons of Lakanto Classic
Instructions
  1. In a glass bowl, add ½ cup of tigernuts and 2 cups of filtered water.
  2. Cover with a tea cloth or thin towel and place a rubberband around it to hold it in place.
  3. Allow to sit on the counter at room temperature for approximately 36 hours. The length of time doesn't have to be perfect, but I've never done less than 24 hours or over 48 hours.
  4. Then, pour the tigernuts and water in a Vitamix or blender. Blend on medium high speed until tigernuts are ground and a white milk is seen.
  5. Over another bowl, pour the milk through a nut milk bag to drain off the tigernut pieces.
  6. It will catch all of the solid ground up tigernuts.
  7. Rinse the blender or Vitamix to remove any tigernut pieces. Pour the strained milk back into the Vitamix or blender.
  8. Add vanilla and Lakanto.
  9. Melt the cacao chips in a microwave safe glass or ceramic bowl (not plastic) for approximately 55-60 seconds. Spoon the mixture into the blender.
  10. Blend and mix well.
  11. Serve immediately with ice, make a milkshake with added ingredients such as organic fruit (banana would probably work very well), or chill for later. It separates some in the fridge, so it will have to be shaken once it has been sitting.
