Organic cauliflower and sweet potato rice skillet

Easy, one skillet meal
Ingredients
  • 10 oz bag frozen organic or regular sweet potato rice (Boulder is a good brand-not organic)
  • 12 oz bag frozen organic cauliflower rice
  • Approximately 1.5 cups of clean organic bone broth (without preservatives or additives) Kettle and Fire Grass Fed Beef Bone Broth or Kettle and Fire Chicken bone broth is recommended (add a little more broth if needed)
  • 1.5 to 2 cups previously cooked grass fed ground beef or shredded previously slow cooked organic chicken (organic plain rotisserie chicken will work too) (use chicken broth if using chicken; we've used chicken broth with beef)
  • 1 Tablespoon finely chopped organic onion (optional)
Instructions
  1. Pour all ingredients into a skillet except meat including onion, if you decide to add.
  2. Bring to a boil.
  3. Add frozen meat.
  4. Bring back to a boil.
  5. Stir and reduce heat to medium low.
  6. Simmer for 10-15 minutes.
  7. Add Himalayan salt and organic black pepper to taste.
  8. Serve immediately.
