Aren’t we all looking for an easy one pot or one skillet meal? Does pouring ingredients in and bringing to a boil sound good? I got you covered. This is a simple and easy recipe, and my hubby and daughter love it. I find these ingredients all at Sprouts Farmer’s Market. Whole Foods has most of the ingredients as well. If you can’t find the bagged riced sweet potato or cauliflower rice, you can make it in a food processor too.
I like to call it clean, easy, comfort food. It is much healthier and lower carb than most comfort food, and it has added nutrition in it from the bone broth. Bone broth can help protect joints because of the gelatin in it. It can promote gut healing (which so many people struggle with) and reducing inflammation. It may improve the skin with the collagen in it. It is also full of amino acids. There are many other health benefits from it as well.
There are variations to the recipe. Feel free to experiment and determine which variation you like best. You can use different kinds of broth and different kinds of meat. I do recommend a bone broth as it adds extra nutritional value versus using a regular beef broth or chicken broth. I also recommend using one without additives or preservatives. My husband’s favorite is using Kettle and Fire’s Chicken Bone Broth with shredded organic chicken. My daughter’s favorite is using Kettle and Fire’s Chicken or Grass fed Beef Bone Broth with grass fed ground beef. They like it with and without added onion. Trader Joe’s also has a clean bone broth I use from time to time.
- 10 oz bag frozen organic or regular sweet potato rice (Boulder is a good brand-not organic)
- 12 oz bag frozen organic cauliflower rice
- Approximately 1.5 cups of clean organic bone broth (without preservatives or additives) Kettle and Fire Grass Fed Beef Bone Broth or Kettle and Fire Chicken bone broth is recommended (add a little more broth if needed)
- 1.5 to 2 cups previously cooked grass fed ground beef or shredded previously slow cooked organic chicken (organic plain rotisserie chicken will work too) (use chicken broth if using chicken; we've used chicken broth with beef)
- 1 Tablespoon finely chopped organic onion (optional)
- Pour all ingredients into a skillet except meat including onion, if you decide to add.
- Bring to a boil.
- Add frozen meat.
- Bring back to a boil.
- Stir and reduce heat to medium low.
- Simmer for 10-15 minutes.
- Add Himalayan salt and organic black pepper to taste.
- Serve immediately.
